Ingredients

  • 2 Tablespoons peanut or canola oil
  • 1 3/4 cup unpeeled diced eggplant
  • 3 Tablespoons red miso
  • 2 1/2 teaspoons honey
  • 2 Tablespoons water
  • 2/3 cup scallions in 1/2" lengths
  • 1/4 teaspoon cayenne pepper

Step 1

Heat oil in wok or large saute pan. Add eggplant and stir-fry 2 to 3 minutes. Add miso, honey, and water. Cook, stirring, about 3 minutes. Add cayenne and scallions, cook 1 minute.
