Ingredients

  • 2 Tablespoons peanut or canola oil
  • 2 pounds round steak,
  • cut into 1/2" cubes
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 1 cup water
  • 15 ounce can beef broth
  • 15 ounce can chopped tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 15 ounce can pinto or kidney beans, rinsed
  • 3 Tablespoons cornmeal

Step 1

In a dutch oven, heat the oil at medium high. Cook the meat in batches, about 5 minutes per batch, until well-browned. Add onion and garlic, cook 5 minutes. Add water, broth, tomatoes, and spices. Bring to a boil, reduce heat to low, cover, and cook about 2 hours, until meat is tender. Stir in beans and cornmeal. Simmer about 20 minutes, until thickened.
