Ingredients
- 1 Tablespoon olive oil
- 1 1/2 cup coarsely chopped onion
- 2 cloves minced garlic
- 1 minced jalapeno
- 4 ounce can chopped green chiles, drained
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1 cup chicken broth
- 19 ounce can cannellini beans, drained
- 2 cups cubed cooked turkey or chicken
- 1/4 cup chopped cilantro
- 1/2 cup shredded Monterey Jack cheese

Preparation
Step 1
In a large saute pan, heat olive oil at medium. Saute onion and garlic for 5 minutes. Add jalapeno and green chiles, cook 1 minute. Add spices and cook 1 minute. Add broth, beans, and meat. Bring to a boil, then simmer 20 to 25 minutes, until slightly thick. Stir in cilantro. Garnish with shredded cheese.
