Ollalieberry Pie or Nectarine Ollieberry pie

Ingredients

  • 7 cups fresh or frozen berries
  • 3/4 c sugar (tart) or 1 1/2 c sugar (sweet)
  • 1/3 c instant tapioca
  • 1/4 t salt

Preparation

Step 1

Mix together and let stand while you make your favorite crust (see pate brise). Bake at 350 for 45 minutes. 15 minutes longer if using frozen berries.

As a variation, substitute some of the berries for sliced nectarines. Use a little lemon juice on nectarines to keep from browning after slicing.
