Ingredients
- 1 # Shrimp Cleaned & Shelled
- 2 Breasts Chicken Bite Size
- 1/2 # Andouille Sausage 1/4" Slices
- 1 Yellow Onion Chop
- 1 Red Pepper Chop
- 3-4 Stalks Celery Diced
- EVOO
- 1 t Oregano
- 1 t Thyme
- 2 Bay Leaves
- 2-3 Cloves Garlic Minced (1st)
- 2-3 Cloves Garlic Minced (2nd)
- 1 Stick Butter
- 1/2 C Flour
- 28 oz Can Diced Tomatoes with Juice
- 2 Cans Chicken Broth
- 2 C Water
- Texas Pete to Taste
- Salt & Pepper to Taste

Preparation
Step 1
Large Stock Pot Medium Heat, Add EVOO (1st)Garlic, Add Chicken & Sausage Saute Until Cooked. Add Shrimp, When Cooked, Set All Aside.
Large Stock Pot Medium Heat, Melt Butter, Add Onions, Peppers & Celery, Saute Until Onions Translucent & Soft. Add Thyme, Oregano, (2nd)Garlic & Flour - Mix Well Cook Until Slightly Brown 5-7 Minutes. Add Tomatoes with Juice & Bay Leaves, Simmer 3-4 Minutes. Add Chicken Broth & Water, Simmer 3-4 Minutes.
Add Chicken, Sausage, Texas Pete, S & P to Taste. Cover, Simmer 30-40 Minutes Low Heat. Stir.
ADD SHRIMP 5 MINUTES BEFORE SERVING.
Serve Over White Rice or Orzo.
Serve with Cornbread.
