- 400 g Sweet Eve strawberries, washed, hulled and roughly sliced
- 30 g caster sugar
- 1/2 tbsp lemon juice
- For the meringue roulade
- 5 egg whites
- 250 g caster sugar
- 3 tbsp flaked almonds
- For the filling
- The strawberry coulis
- 200 ml double cream
- 3 tbsp icing sugar
- 1 tsp vanilla extract
