  • 8 oz. macaroni, uncooked
  • 1 lb. bulk sausage
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 2 tbsp. flour
  • 1/2 tsp. salt
  • 1 1/2 c. milk
  • 2 c. shredded Cheddar cheese, divided

Step 1

Cook macaroni in boiling salted water according to pkg. directions; drain and set aside. In a skillet, sauté sausage, onion and pepper. Pour off excess fat; add flour and salt, blending well. Gradually add milk. Continue to cook over low heat, stirring constantly until thickened and bubbly, Stir in macaroni and 1 cup cheese. Transfer macaroni and sausage mixture to a lightly greased 1½ qt. casserole. Sprinkle remaining cheese over casserole, bake at 400° for 25 to 30 min.
