Ingredients

  • Crumble topping:
  • 1/2 lb ripe plums (cut in quarters and pitted) I doubled the plums and ended up with crumble instead of cake.
  • 3/4 cups ripe banana (about one big banana)
  • .875 c sugar ~you could probably do very well with less
  • 1.2 c flour (maybe more? I converted these quantities from gms and they don't seem quite right)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • .625 c grapeseed oil or Earth Balance (this is a LOT of oil...considering the banana, I'm pretty sure we could go lighter here)
  • 1/4 cup flour [Any kind will do: whole wheat, gluten-free, spelt, white]
  • 1/2 cup rolled oats
  • 3-4 T sugar, brown or white
  • 2 T Earth Balance, melted and drizzled over top
  • 1/4 cup chopped nuts,
  • walnuts?

Preparation

Step 1

In a small bowl combine flour, baking powder, salt and cinnamon and set aside. In a bigger bowl mix sugar, banana and sunflower oil until smooth. Then add the flour mixture and mix again until everything is well combined. At last, fold in the plum quarters and fill the dough into a prepared loaf pan. Cook at 160°C / 320 °F for about 40 Minutes or until a toothpick comes out clean.

replace eggs with banana

I think this would be nice with a crumble topping
