Ingredients

  • Winter squash (pumpkin, butternut squash, acorn squash, red kuri squash, etc.)
  • Salt
  • Olive oil
  • Smoked paprika

Preparation

Step 1

1) Preheat the oven to 400 F/ 200 C. Put a pot of salted water on the stove to boil.
2) Remove the seeds from the squash. Clean off any pulp or fibrous pieces. Rinse the seeds.
3) Add the seeds to the pot of boiling water. Simmer for 15 minutes.
4) Drain the seeds. Pour some olive oil (~1 T.) in a roasting pan or in a baking dish and then add the seeds. Top with more salt and smoked paprika.
5) Bake in the oven for 15 minutes. Stir. Bake for another 15 minutes. Test to see if the seeds are done. If they are still chewy, stir and bake another 5 minutes.
