Step 1
Cut potatoes into french fry sized strips. Bring a large pot of water to a boil, and blanch the fries for one minute. Drain and allow to cool. Freeze on a cookie sheet (flash freezing). Once frozen, transfer into a Ziploc bag or freezer container.
To use: Remove from freezer and thaw. Once thawed, deep fry in hot oil until golden brown. Drain and serve.
