Ingredients

  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 2 eggs
  • 1 onion, quartered
  • 1 clove garlic, peeled
  • 2 carrots, pared, cut in chunks
  • 4 stalks celery from center with leaves, cut into 1-inch pieces
  • 6 sprigs parsley
  • 1 tsp. salt
  • 1/2 tsp. each black pepper, dried sage and thyme leaves

Step 1

In large bowl, mix beef and pork well. Into food processor with steel blade or blender, crack eggs and add onion, garlic, carrots, celery and parsley. Process until puréed. If using blender, pureé in several batches, adding again enough puréed mixture with new batch of vegetables to keep mixture moving. Blend mixture with meat. Add salt, pepper, sage and thyme. Turn into lightly greased 8-by-4-inch loaf pan or form into loaf on rack on baking sheet. Bake at 350° for 45 to 50 min. or until center of loaf is done.
