Strawberry Topping for Cheese Cake

Ingredients
- 2 1/2 qts fresh #1 strawberries
- 1 12 ounce jar seedless raspberry jam
- 1/2 cup triple sec
- 1/2 cup cold water mixed with 1 tablespoons corn starch to thicken-1 tablespoon lemon juice

Step 1
Wash and dry strawberries. Put jam in saucepan over low heat -combine corn starch and add cold water to make 1/4 cup liqiud,stir until lump free. Mix with jam. Add triple sec. and lemon juice while stirring on low heat, heat, until mixture is clear and thicken. cool in ref. about 15 minutes remove cake from pan spoon glaze over berries refrigerate until served
Strawberry Glaze
1 qt. strawberries
1 12 ounce jar red rasberries jam ( seedless )
1 tablespoon cornstarch
1/4 cup cintrean
1/4 cup water
Several hrs before serving. wash and hull berries and let dry completley on paper towels. Combine a little jelly with cornstarch in saucepan and mix well. Add remaining jelly, cintrean and water and cook over meduim heat stirring freguently until thicken and clear about 5 minutes. Cool to luke warm, stirring occasionally, spoon glaze over berries and allowing some to drip down side of cake ref. until the glaze set.
