Ingredients
- 2 c. fresh blueberries or 2 c. frozen
- sugar
- 1 tsp. grated lemon rind
- 3/4 c. water
- 3 tbsp. butter or margarine
- 1 egg
- 1 tsp. vanilla
- 3/4 c. flour
- 1 tsp. baking powder
- 1/8 tsp. salt
- 1/4 tsp. nutmeg or mace
- 1/3 c. milk
- vanilla ice cream or whipped cream, optional

Step 1
Pick over and wash fresh berries, if used. Place berries in saucepan with ¼ c. sugar, lemon rind and water. Bring to boil. Simmer for 5 min. Pour equal amounts into 4 greased tart pans. Cream butter, 1/3 c. sugar, egg and vanilla until well blended. Mix flour, baking powder, salt and nutmeg. Add to creamed mixture along with the milk. Beat until smooth. Spoon batter over hot blueberries. Bake at 375° for about 30 min. or until browned. Serve warm, plain or with ice cream or whipped cream.
