Ingredients
- 4 cups gluten-free oats
- 1 cup chopped walnuts (or other nuts for variety)
- 1/3 cup flax seed meal
- 1/4 cup coconut flakes (or more...or not)
- 1/2 cup raisins (or dates...or dried blueberries...whatever)
- 1/4 cup oil (grapeseed, coconut, whatever - I find the coconut makes it a bit too sweet - oh, also melt it if used)
- 1/2 cup liquid sweetener (honey, maple syrup, agave nectar)
- 1/4 tsp salt
- splash of vanilla

Preparation
Step 1
Combine the first 4 items in a mixing bowl. In a small dish, combine the last 4 ingredients and stir until emulsified. Mix the dry ingredients with the wet ingredients, stir until well coated.
Bake at 250F for 2 hrs on a parchment-lined baking sheet.
Add raisins after granola finishes baking.
