Swiss Cheese Potato Pancakes

Ingredients
- 3 oz cream cheese
- 2 eggs
- 4 T flour
- 4 c shredded potatoes
- 1/4 c shredded Swiss cheese
- 2 T grated onion
- 1/4 tsp salt
- 1/8 tsp pepper
- dash cayenne pepper
- 3 T butter
- 3 T olive oil

Preparation
Step 1
Beat cream cheese until smooth. Add eggs one at a time, beating well after each addition. Add flour and mix well. Stir in potatoes, Swiss cheese, onion, salt, pepper and cayenne pepper.
In large skillet, heat butter and oil over medium heat. Drop batter by 1/4 cupfuls, press liglhtly to flatten. Fry until golden & crisp (about 5 mn on each side). Drain on paper towels.
