Ingredients

  • 1 pound bulk sausage
  • 1 small yellow onion, chopped
  • 1 green bell pepper, chopped
  • 8 ounces mushrooms, sliced
  • 12 eggs
  • 1/2 cup grated Cheddar cheese
  • 2 tomatoes, diced
  • 1/2 tsp dried thyme
  • salsa, for garnish
  • Jalapeno peppers, finely chopped, for garnish

Preparation

Step 1

1. Preheat the oven to 350
2. Break up the sausage and saute in a large frying pan until no longer pink. Add the onion, bell pepper, and mushrooms and saute until the vegetables are limp, 3-5 minutes. Beat the eggs, then add them to the frying pan with the sausage and vegetables and soft-scramble the eggs.
3. Transfer the mixture to a 13x9" baking dish. Sprinkle the cheese over the eggs. Distribute the diced tomatoes evenly over the cheese. Sprinkle with the thyme.
4. Bake for 20 minutes. Serve warm with salsa and jalapenos.
