Low Carb,Low Fat Eggplant Lasagna

Ingredients

  • 6-7 Asian eggplants(or use regular ones but less since they are larger)
  • 1/2 lb. farmers cheese
  • 1-1/4 cups cottage cheese
  • 1/2 cup low fat mozzarella cheese
  • 1 Tbs Parmesan cheese
  • 2 1/2 cups marinara sauce
  • salt and pepper
  • garlic powder

Preparation

Step 1

Preheat oven to 450.
Cut eggplant on the diagonal,in circles about 1 1/2 inches thick. Place slices in a lg. bowl and season with salt and pepper and garlic powder.Coat evenly. Let sit for 30 min.
Lay slices flat on a greased cookie sheet and bake for 15 min. Cool.
Mix farmers and cottage cheese in a bowl. Layer in a 9" square pan in the following order.
Marinara Sauce
Eggplant
cheese mixture
Marinara Sauce
eggplant
Cheese mixture
Top with mozz cheese and sprinkle with Parm cheese.
Bake uncovered for 45 min.
