Ingredients

  • 1 1/4 cup flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter
  • 2 eggs, slightly beaten
  • 1 cup chopped pecans
  • 1/2 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 2 tbsp melted butter
  • 1 tsp vanilla

Preparation

Step 1

Preheat oven to 350 degrees.
For crust: Combine flour, powdered sugar, and 1/4 tsp salt. Using a pastry blender, cut in 1/2 cup butter until the mixture resembles coarse crumbs. Pat the mixture into an ungreased 11x7x2 inch baking pan. Bake for 20 min or until lightly browned.
For filling: In a medium bowl stir together eggs, pecans, brown sugar, corn syrup, the 2 tbsp melted butter and the vanilla. Pour over the baked crust.
Bake for 20 min or until the filling is set. Cool completely in the pan set on a wire rack. Cut into 24 bars, cover and store in the refrigerator.
