Herbed Ricotta Bruschetta

- 2 c ricotta cheese
- 3 T scallions, minced white and green parts
- 1 T fresh chives
- salt and pepper to taste
- small baguette
- olive oil
- whole garlic clove cut in half
Preparation time 10mins
Cooking time 80mins
Mix first four ingredients together in a bowl and allow to sit for at least an hour.
Slice bread diagonally and place on baking sheet. Drizzle with olive oil. Toast in oven til golden brown. Remove from oven and while bread is still warm, rub with cut garlic clove.
Spread ricotta mix on garlic toast and enjoy.
