Pudding may be frozen. Allow several hours in refrigerator for thawing. Other suggested toppings are partially thawed frozen fruit, sugared fresh fruit, apricot, pineapple or peach preserves slightly thinned with brandy, light rum or orange juice.

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 c. cold water
  • 3 tbsp. boiling water
  • 3 egg whites
  • 1/8 tsp. salt
  • 6 tbsp. sugar
  • 1/2 tsp. vanilla
  • 1 c. whipping cream, whipped
  • 2/3 c. canned moist-type flake coconut
  • Mandarin oranges for garnish

Step 1

Soften gelatin in cold water. Add boiling water and stir until dissolved. Cool to room temperature. Beat egg whites with salt until frothy. Add sugar 1 tbsp. at a time and beat well after each addition. Continue beating until mixture holds a peak when beater is lifted. Slowly beat in gelatin. Add vanilla to whipped cream. Mix and fold into egg whites. Fold in coconut. Cover and chill at least 4 hours. Garish with mandarin oranges and serve.
