Ingredients
- 2 eggs
- 1 cup sugar
- 2/3 cup oil
- 1 1/2 cups flour
- 1 tea. baking soda
- 1 tea. cinnamon
- 1 tea. nutmeg
- 1/2 tea. salt
- 1 1/2 cups finely grated carrots
- 1 cup chopped walnuts
- 3/4 cup raisins

Preparation
Step 1
Preheat oven to 350 degrees.
Beat eggs with sugar and oil. Sift together the flour, baking soda, cinnamon, nutmeg and salt. Add to the egg mixture and beat well. Stir in the carrots, walnuts and raisins.
Grease a 9x5 loaf pan. Bake for approx. 40 minutes, or until a toothpick inserted co9mes out clean.
Cool several hours before serving.
