Paleo Sunflower or Almond Butter Bark

The base of this bark is coconut oil. If your oil has liquefied, place it in the refrigerator until it firms up a bit. You can substitute with any other nut butter (cashew, etc). Peanut Butter is not Paleo, but can be used in this recipe if you are not concerned about Paleo!

Ingredients

  • 1 cup coconut oil, softened
  • 1/4 cup sugar-free sunflower seed butter, or almond or cashew butter
  • 2 tsp pure maple syrup (you can use raw honey)
  • 1/2 tsp pure vanilla extract
  • pinch sea salt
  • 1 oz dark chocolate, chopped fine (you can use as much or little chocolate as you like)

Preparation

Step 1

1. Place all of the ingredients, except the chocolate, in a medium bowl and mix to combine.

2. Pour onto a parchment-lined baking sheet.

3. Sprinkle with chopped chocolate.

4. Place the baking sheet in the freezer for at least 30 minutes, or until bark is hard.

5. Break into pieces. Store in an airtight container in the freezer, for up to 1 month.
