Ingredients
- Salad:
- 1 bunch leafy green kale
- 8-10 large Brussels sprouts
- 1/4 cup finely chopped purple onion
- 1/3 cup whole roasted salted almonds, roughly chopped
- 1/2 cup grated Parmesan cheese
- Dressing:
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 tbsp grainy mustard
- 1 small garlic clove, minced
- 1 tsp sugar
- Salt and freshly ground pepper

Preparation
Step 1
Remove ribs from kale and chop. Thinly slice the Brussels sprouts (cut in half first, if large). Put kale, sprouts and onion in a bowl.
To make dressing, put all ingredients in a bowl and whisk or jar and shake. Toss with salad and top with almonds and cheese. Set aside for an hour or so to let flavors mix.
