Snow-Topped Chocolate Mint Cookies

By

Our local newspaper had a cookie contest a while back. This was one of the recipes featured, and it caught my eye because I love mint flavor. My family likes these cookies as much as I do.

Preparation

Step 1

In a microwave, melt 1 cup chocolate chips; stir until smooth and set aside to cool.

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the melted chocolate chips and vanilla. Combine flour, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in the remaining chocolate chips. Cover and refrigerate for 2 hours or until easy to handle.

Roll into 1-in. balls, then roll in confectioners' sugar. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until edges are set and centers are almost set. Cool for 10 minutes before removing to wire racks.
