Ingredients

  • 1 lb. shelled and deveined medium shrimp
  • 2 romaine hearts, coarsely shredded
  • 2 cups cherry tomatoes, halved
  • 1 small seedless cucumber, diced
  • 1/2 cup coarsely chopped cilantro
  • 1 avocado, diced
  • 4 ounces tortilla chips (about 4 cups)
  • 2 Tbsp. reduced-fat sour cream
  • 2 Tbsp. reduced-fat mayonnaise
  • 2 Tbsp. fresh lime juice
  • 1/2 tsp. finely grated lime zest
  • Salt and freshly ground pepper

Preparation

Step 1

1. Mix shrimp, romaine lettuce, tomatoes, cucumber, cilantro, avocado and tortilla chips.

2. In a small bowl, whisk the sour cream with the mayonnaise, lime juice and lime zest and season with salt and pepper. Pour the dressing over the salad and gently toss to coat. Serve right away.
