Ingredients

  • 1 eggplant
  • 2 cloves garlic, minced
  • 1 1/2 tablespoons soy sauce
  • 2 tablespoons cilantro
  • 1 tablespoon lime juice
  • 1/4 cup light coconut milk
  • 1 teaspoon brown sugar
  • 1/2 teaspoon minced jalapeno
  • 1 teaspoon minced ginger
  • 1 teaspoon peanut butter

Preparation

Step 1

1. Heat broiler

2. Cut eggplant lengthwise into 1/2" thick slices. Peel end of slices to remove excess tough skin. Score top side of each slice in a square diamond pattern, cutting about 1/4" into flesh. Place in a single layer on a broiling pan. Combine garlic and soy and pour over eggplant, spreading into scored diamonds.

3. Broil about 6" from heat until browned and tender, about 4 minutes/side.

4. Meanwhile, combine cilantro-peanut butter. Serve eggplant warm or at room temperature, drizzle with sauce and pan juices.

Notes: Really delicious and very easy. Made as written and served with coconut rice.
