Ingredients
- 1 medium red onion, chopped
- 1 green or yellow bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium sweet potato, peeled and cut into 1⁄2-inch pieces
- 3 garlic cloves, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 teaspoons unsweetened cocoa powder
- 1/4 teaspoon ground cinnamon
- 2 cans diced tomatoes
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 2 cups vegetable stock

Preparation
Step 1
Sautee the onion and peppers on medium-high heat in cooking spray 5-10 minutes until translucent. Add the sautéed vegetables to the slow cooker then add the remaining ingredients and stir. Cover and cook on low for 6-8 hours. Season chili with salt and pepper to taste and serve with rice and shredded cheese or yogurt (if desired).
