Ingredients

  • 1 1/2 pounds 1 1/2 pounds ground lean beef
  • 1/4 cup 1/4 cup salad oil
  • 1 cup 1 cup chopped onion
  • 1 1 minced clove garlic, optional
  • 1/2 cup 1/2 cup chopped green pepper
  • 2 1/2 cups 2 1/2 cups canned tomatoes (no. 2 can)
  • 2 cups 2 cups canned whole kernel corn (no. 303 can)
  • 1 tablespoon 1 tablespoon salt
  • 1 1/2 tablespoon 1 1/2 tablespoon chilli powder
  • 1/4 teaspoon 1/4 teaspoon black pepper
  • 1/2 cup 1/2 cup cornmeal
  • 1 cup 1 cup water
  • 1 cup 1 cup whole or pitted ripe olives
  • Topping;
  • 1 1/2 cups 1 1/2 cups milk
  • 1 teaspoon 1 teaspoon salt
  • 2 tablespoons 2 tablespoons butter or margarine
  • 1/2 cup 1/2 cup cornmeal
  • 1 cup 1 cup grated sharp cheese
  • 2 2 eggs

Preparation

Step 1

Brown beef in salad oil. Add onion, garlic and green pepper and cook and stir until vegetables are wilted. Stir in tomatoes, corn, salt, chilli powder and pepper and simmer about 5 minutes. Mix cornmeal and water, stir into tamale mixture, cover and cook slowly about 10 minutes. Stir in olives. Turn into 2-quart baking dish. Cover with topping mixture. Bake in moderately hot oven (375F.) about 20 minutes. To make topping, heat milk, salt and stir until thickened. Remove from heat and stir in cheese and lightly beaten eggs
