Ingredients
- 1 1/2pounds1 1/2 pounds ground lean beef
- 1/4cup1/4 cup salad oil
- 1cup1 cup chopped onion
- 11 minced clove garlic, optional
- 1/2cup1/2 cup chopped green pepper
- 2 1/2cups2 1/2 cups canned tomatoes (no. 2 can)
- 2cups2 cups canned whole kernel corn (no. 303 can)
- 1tablespoon1 tablespoon salt
- 1 1/2tablespoon1 1/2 tablespoon chilli powder
- 1/4teaspoon1/4 teaspoon black pepper
- 1/2cup1/2 cup cornmeal
- 1cup1 cup water
- 1cup1 cup whole or pitted ripe olives
- Topping;
- 1 1/2cups1 1/2 cups milk
- 1teaspoon1 teaspoon salt
- 2tablespoons2 tablespoons butter or margarine
- 1/2cup1/2 cup cornmeal
- 1cup1 cup grated sharp cheese
- 22 eggs

Preparation
Step 1
Brown beef in salad oil. Add onion, garlic and green pepper and cook and stir until vegetables are wilted. Stir in tomatoes, corn, salt, chilli powder and pepper and simmer about 5 minutes. Mix cornmeal and water, stir into tamale mixture, cover and cook slowly about 10 minutes. Stir in olives. Turn into 2-quart baking dish. Cover with topping mixture. Bake in moderately hot oven (375F.) about 20 minutes. To make topping, heat milk, salt and stir until thickened. Remove from heat and stir in cheese and lightly beaten eggs
