Ingredients
- Cake:
- 3 eggs, beaten
- 1 C sugar
- 2/3 C pumpkin puree
- 3/4 C flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ground ginger
- Filling:
- 1- 8 oz package cream cheese (+ 4 more?)
- 4 Tbs butter, room temperature
- 1/2 tsp vanilla
- a few dashes freshly ground nutmeg or cinnamon
- 1 C powdered sugar, sifted

Preparation
Step 1
Preheat oven to 375.
Beat eggs and add sugar until well blended. Add pumpkin. Combine flour, baking powder and spices. Add to egg mixture. Line jelly roll pan with parchemnt and grease it with butter. Bake at 375 for 12-13 minutes. Don't overbake! Turn onto a towel sprinkled with powdered sugar. Roll cake up and let cool completely.
Make filling by combining all ingredients and beating until light and fluffy.
Unroll cake, spread with frosting and reroll. Sprinkle with powdered sugar just before serving.
