Ingredients
- 2 cups cooked black beans
- 1/2 cup water, or bean broth
- 1 tablespoon sunflower oil, or safflower oil
- 1/4 cup chopped scallion
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1/4 cup cilantro
- 1 teaspoon chipotle chile canned in adobo, or 1/2 tsp cayenne
- 2 limes, juice of; 2-3
- salt

Preparation
Step 1
1. Warm beans in water.
2. Saute scallion and spices until tender, about 10 minutes. Stir in cilantro and turn off heat.
3. Coarsely puree with beans and chile; add more chile as desired. Add lime and salt.
Notes: Yum, yum, yum. Awesome - used in VCFE quesadillas, but would be great for nachos as well.
