Ingredients

  • 2 cups cooked black beans
  • 1/2 cup water, or bean broth
  • 1 tablespoon sunflower oil, or safflower oil
  • 1/4 cup chopped scallion
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1/4 cup cilantro
  • 1 teaspoon chipotle chile canned in adobo, or 1/2 tsp cayenne
  • 2 limes, juice of; 2-3
  • salt

Preparation

Step 1

1. Warm beans in water.

2. Saute scallion and spices until tender, about 10 minutes. Stir in cilantro and turn off heat.

3. Coarsely puree with beans and chile; add more chile as desired. Add lime and salt.

Notes: Yum, yum, yum. Awesome - used in VCFE quesadillas, but would be great for nachos as well.
