Baked Potato Soup

Ingredients
- 4 potatoes
- 2/3 cup flour
- 6 cups 2% low-fat milk
- 1 cup cheddar cheese, lowfat
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup sour cream, light
- 3/4 cup scallion, chopped
- 6 slices bacon, cooked and crumbled

Preparation
Step 1
1. Heat oven to 400.
2. Pierce potatoes, bake until tender. Cool. Peel and coarsely mash.
3. Place flour in dutch oven. Whisk in milk. Cook until thick and bubbly, about 8 minutes. Add potatoes, 3/4 cup cheese, salt and pepper. Stir until cheese melts. Take off heat.
4. Add sour cream and 1/2 cup scallion. Cook over low heat 10 minutes. Top with cheese, scallion, bacon.
