Chocolate Ginger Spice Bread

Ingredients

- We can't get enough of chocolate and ginger, so here's an easy quick bread recipe that's packed with chocolate flavor and spices. Crystallized ginger
- and chocolate chips give it a little added decadence and amp up the flavor even more. Be sure to remove this quick bread from the oven as soon as
- it's ready. Overbaking will make it dry.
- Makes one 8 1/2" x 4 1/2" loaf or three 4" x 2" loaves
- 1 1/3 cups All Purpose Flour (178g)
- 1/3 cup Dutch Processed Cocoa Powder (26g)
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. freshly grated nutmeg
- 1/2 tsp. ground ginger
- 2 large eggs
- 1/2 cup granulated sugar (96g)
- 1/3 cup dark brown sugar (65g)
- 5 tbsp. unsalted butter, melted (75g)
- 2/3 cup sour cream (150g)
- 1/2 cup chocolate chips
- 1/2 cup crystallized ginger, chopped (100g)
- For the Glaze:
- 1 cup powdered sugar, sifted (115g)
- 2 tbsp. melted butter (26g)
- 2 tbsp. milk (30g)
- Tiny pinch of salt
- 1/8 tsp. vanilla
- 1/4 cup crystallized ginger, finely chopped (50g)

Makes one 8 1/2" x 4 1/2" loaf or three 4" x 2" loaves
: Preheat the oven to 350 degrees. Coat the loaf pan with non-stick baking spray and set aside. Combine the flour, cocoa, baking powder, salt and spices in a mixing bowl and whisk well to combine. In another large bowl, whisk the eggs to break them up and whisk in both the granulated and dark brown sugar. Continue whisking until the mixture lightens and then whisk in the butter and sour cream. Add the dry ingredients to the egg mixture all at once and gently stir to combine. Stir in the chocolate chips and candied ginger. Scrape the batter into the loaf pan and smooth the top. Bake until a toothpick inserted comes out with just a few crumbs on it, but not totally clean. Approximately 35 - 40 minutes. Do not overbake the bread. Let cool completely.
: In a large bowl, whisk the powdered sugar, melted butter, milk, salt and vanilla until combined. Add a little additional milk to thin the glaze if necessary. Top the loaf with glaze and add chopped candied ginger.
