Ingredients
- 3 medium zucchini, sliced very thin with a vegetable peeler
- zest and juice of 1 lemon
- 3 tsp pine nuts, toasted
- extra-virgin olive oil
- sea salt, to taste
- parmigiano reggiano, for grating

Step 1
Mix the zucchini slices, lemon zest, salt and cheese together with a squeeze of lemon juice and a drizzle of oil. Let sit, refrigerated, for about 40 minutes. Serve with toasted pine nuts on top.
