Ingredients

  • 5 cups warm water
  • 1 cup sugar
  • 2 oz fresh yeast or 4 Tbs dry yeast
  • 4 eggs
  • 3/4-1 cup oil
  • 5 lbs flour
  • 3 Tbs kosher salt

Step 1

Crumble the yeast into the mixer bowl. Add 2 cups of water and the sugar. When it has proofed add about half of the flour into the mixer. Add the eggs and oil. Mix until all the ingred. are incorporated. Add most of remaining flour,salt and all of remaining water. Add flour if needed a little at a time. Mix for 12 min. Place dough in a greased bowl coverd with plastic wrap for 1 to 1 1/2 hrs. Take challah and make a bracha. Divide challah into 5 equal parts. Braid and place in pans. Rise for 30 min,egg wash (yolks,cinn and a little sugar) and seed them.Turn oven to 450 place challah in oven for 15 min. Lower the temp to 350 and bake for 45 min until done.
