  • 4 cups fresh cauliflower flowerets
  • Vegetable cooking spray
  • 1 1/2 tablespoons cornstarch
  • 1 1/2 cups milk
  • 1/2 cup shredded sharp Cheddar cheese
  • 1 1/2 tablespoons grated Parmesan cheese, divided
  • 1/8 teaspoon dry mustard
  • 1/8 teaspoon pepper
  • 1 tablespoon fine, dry bread crumbs
  • 1 dash ground nutmeg

Preparation

Step 1

Steam cauliflower until crisp-tender. Transfer to a baking dish coated with cooking spray; set aside.

Combine cornstarch and milk in a saucepan over medium heat, stirring constantly, until thickened. Stir in Cheddar cheese, 1 tablespoon Parmesan cheese, mustard, pepper, and nutmeg; cook mixture until cheese melts, stirring constantly.

Pour sauce over cauliflower; sprinkle with remaining Parmesan cheese and bread crumbs. Broil for 5 minutes or until lightly browned and bubbly.
