Crisp Almond Biscotti

I made this recipe and it was great! I dipped the finished product in melted caramel and chocolate. So rich and delicious!

Ingredients
- 1 3/4 C all purpose flour
- 1 C sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 C whole almonds toasted
- 2 large eggs
- 1/2 tsp. almond extract

Step 1
Combine flour, sugar, baking powder and salt in large bowl. Place almonds in food processor. Pulse 10 times. Stir nuts into flour mixture.
Combine eggs and extract, stirring well with a whisk. Add egg mixture to flour mixture, stirring just until blended (dough will be crumbly) Turn dough onto slightly floured surface; knead lightly 7-8 times. Divide dough into 2 equal portions. Shape each portion into 6 in. long roll. Place the rolls 6 inc. apart on baking sheet. Bake for 25 min. or until slightly browned. Cool for 5 min. on wire rack.
Cut cross ways and bake again until each side is golden brown. yield 2 doz.
