Ingredients
- 1 1/4 cups chocolate wafer cookie crumbs
- 1/4 cup granulated sugar
- 4 tablespoons butter, melted
- 1 (8-ounce) package cream cheese, softened
- 1 (14-ounce) can sweetened condensed milk
- 2/3 cup chocolate syrup
- 2 tablespoons instant coffee granules
- 1 teaspoon hot water
- 1 cup whipping cream, whipped

Step 1
Combine cookie crumbs, granulated sugar and butter in a small bowl and mix well. Press onto the bottom of a buttered 9-inch springform pan. Chill until firm.
Place cream cheese in a medium bowl. Beat with an electric mixer set at medium speed until fluffy.
Add sweetened condensed milk and chocolate syrup to cream cheese in bowl and mix well.
Combine coffee granules and hot water in a small bowl and stir until coffee is dissolved.
Add to cream cheese mixture and mix well. Fold in whipped cream. Spoon into prepared pan. Freeze, covered, until set, about 6 hours.

Grandma's Secret Trick:
When Grandma wanted to make this cheesecake a day or two in advance of serving it, she baked the crust at 350°F for 12 minutes, then let it cool on a wire rack before spooning in the filling. The baked crust remained crunchy and firm for a day or two.
