Ingredients

  • 1 large red beet,roasted at 450 sprinkled with olive oil then cubed or strips
  • 1/2 cup walnuts,toasted
  • 1 orange in segments
  • 1 small red onion,sliced
  • 1 bag mixed baby greens
  • 1 cup arugula
  • 3 Tbs Craisins
  • 1/2 tsp dijon mustard
  • 1/4 tsp honey
  • 2 tsp chopped parsley
  • 2 Tbs red wine vinegar
  • 3 Tbs. olive oil
  • salt and pepper

Step 1

On cookie sheet lined with parch. paper or alum foil place sliced beets and sprinkle with olive oil or spray with Pam and roast at 450 until soft. Cool. Add rest of vegetables and fruits.Mix mustard-pepper for the dressing.
