Ingredients
- 1 1/2 c. frozen shelled edamame
- 2 cloves garlic, thinly sliced
- 2 tsp. olive oil
- 1/2 tsp. grated lemon zest
- 1 tbsp. lemon juice
- 1/4 tsp. salt
- 1/4 c. grated paresan

Preparation
Step 1
In a pot of boiling water, cook edaamame and garlic till tender, ~5 min. Measure out 1/2 c. of cooking liquid and reserve. Drain edamame and put in food processor.
Add the cooking liquid, oil, lemon zest, lemon juice and salt to processor and puree till smooth. Add the cheese and pulse until combined. Serve hot.
