Ingredients

  • 5 lb high gluten flour
  • 4 env. dry yeast
  • 1 cup very warm water
  • little sugar
  • 2 heaping tsp kosher salt
  • 2 1/3 cup oil
  • 2 eggs
  • 4 yolks
  • 1 1/4 cup sugar
  • 3 cups water

Preparation

Step 1

Mix yeast,warm water and a little sugar. Let sit until it bubbles and foams about 10 min.
In a sep. bowl mix eggs,yolks,salt,sugar,water and some of the oil. Salt shouldn't directly touch the yeast. Add yeast mixture and slowly add the flour and rest of oil. Rise for one hour in a greased covered bowl. Punch and let rest another 45 min. Braid challahs and place in greased pan and let rise another 45 min. Make an egg wash with yolks,sugar and a little cinn. Bake at 375 for 10 min,lower to 350 and continue baking f.r another 40 min.(until brown).This makes 5-6 challahs
