Balsamic-roasted Potatoes

Ingredients
- 2 pounds red potatoes, cut into 1-inch pieces
- 1/2 onion, quartered
- 2 T. olive oil
- 1 t. kosher salt
- 1/2 t. black pepper
- 2 T. balsamic vinegar

Preparation
Step 1
1. Preheat oven to 450 degrees. Line a rimmed baking sheet with foil.
2. In a large bowl, toss potatoes and onion with olive oil. Sprinkle with salt and pepper. Place in a single layer on prepatred baking sheet.
3. Bake for 20 minutes. Drizzle with vinegar and bake for 4 more minutes.
