  • 2 T. Golden raisins
  • 4 oz. fusilli (uncooked)
  • 10 oz. chopped frozen spinach
  • 4 tsp. olive oil
  • 1/2 medium onion
  • 1/4 tsp. salt
  • 1/4 C. grated Parmesan cheese
  • 1/4 tsp. white pepper

Step 1

1. In a small bowl, soak the raisins in hot water to cover until soft and plumped, about 10 minutes. Drain, discarding the water.

2. Cook the fusilli according to package directions; drain and place in serving bowl.

3. Meanwhile, cook the spinach according to package directions; drain, squeezing out the excess liquid.

4. In a medium nonstick skillet, heat the oil. Saute the onion until softened, about 2 minutes. Reduce the heat and stir in the spinach and salt; cook about 2 minutes.

5. Add the spinach, raisins, Parmesan, and ricotta to the fusilli; toss to combine, and sprinkle with the pepper.
