Ingredients

  • 1 lb fettuccine noodles (dried)
  • 1 can coconut milk
  • 1/2 cup raw cashews
  • 2 tablespoons nutritional yeast flakes
  • 1 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 cup water
  • 1 tablespoon olive oil
  • dash of onion and garlic powder

Preparation

Step 1

Step 1 - Cook fettucine noodles according to package instructions. I always add a little extra olive oil to keep noodles from sticking together.

Step 2 - Blend remaining ingredients in blender, then pour over drained and cooked noodles. Cook on stove with medium heat until alfredo sauce begins to thicken slightly.

Step 3 - Serve!
