Ingredients
- 1/4 cup canola oil
- 2 cups fresh corn, cut from the cob (or frozen corn, defrosted)
- 1/3 cup chopped green onion
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/3 cup milk
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon hot sauce
- 1 tomato, sliced (optional)
- Sour cream (optional)

Step 1
Heat the oil in a wide, deep skillet over medium-high heat.
Mix the corn, green onion, flour and baking powder in a medium bowl.
In another bowl, mix the milk, egg, salt, pepper and hot sauce. Add to the corn mixture and stir until just combined. Do not overmix.
Drop large tablespoonfuls of batter into the hot oil, flattening with the back of the spoon. Cook in batches for about 2 minutes per side, or until golden brown.
Transfer to paper towels to drain. Serve hot with tomato slices and a dollop of sour cream, if desired. Garnish with additional chopped scallion.

Dip the spoon into the hot oil before scooping the batter into the skillet. It will help the batter slide right off.
