Pressure Cooker Cinnamon Apple Sauce

All you do is bring the apples to high pressure and turn it off immediately. You can use any apple you like (just not Red Delicious, which are best for eating and make a mealy sauce), but the recipe is probably best with a combination.

Ingredients
- 2 1/2 lbs. tart and firm apples, peeled, cored, and cut into 1/4 inch thick wedges
- 1/2 cup water
- 1/3 cup sugar
- 1 pinch of ground cinnamon
- 1 pinch of ground nutmeg

Step 1
In a 5 to 7 quart pressure cooker, combine the apples, water, sugar, cinnamon and nutmeg.
Lock the lid in place. Bring to high pressure over high heat.
Immediately remove from the heat and quick-release the pressure.
Open the lid, tilting it away from you to block any escaping steam.
Stir well to break up the apples.
Return the pot to a boil.
Cook for 3 to 4 minutes or until the applesauce has thickened.

My almost 3-year old and I made this together. We used Splenda in place of sugar and it came out perfect!
