Ingredients

  • 1 1/2 large onion
  • 3 cl garlic
  • 1 T Olive Oil
  • 1 lb Top Sirloin (cubed 1")
  • 2 Qts water (or more)
  • 1 1/2 c Beans (15 bean mix)
  • 1 cube chicken broth
  • 1 cube Beef bouillon
  • 3 stalks Celery (chopped)
  • 3 carrots chopped
  • 2 potatoes cubed small
  • 1 large can tomatoes
  • 1 T Salt
  • 1 t pepper
  • 1 t basil
  • 1 T parsley
  • 3 T italian Seasoning
  • 2 small sliced zuchini
  • 1/4 bag frozen peas
  • 6 italian sausage cut into 1/2" pieces
  • 1 1/2 c pasta (usually rotini but pick your fav)
  • Grated Parmesan for topping

Step 1

In a large pot bring water, beans, chicken and beef broth to a boil and boil hard 20 minutes in a large stock pot or crock pot. In a skillet, saute onion, garlic in olive oil til soft. Add cube beef and brown on all sides, add beef to pot along with celery, carrots, potatoes, tomatoes and seasoning. Return to a boil and turn down to simmer. Let soup cook for several hours, I usually start in the morning and let cook for several hours. Be sure to stir occassionally and add more water as necessary. About a half hour before you plan to serve the soup add the remaining ingredients and check seasoning, add more as necessary.
Top each serving with some grated parmesan.
