  • 3 heads Romaine lettuce
  • 1/2 cup firm tofu
  • 4 tablespoons fresh lemon juice
  • 3 whole garlic cloves, peeled
  • 2-3 tablespoons capers, drained
  • 1-2 tablespoons nutritional yeast
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon salt
  • Water, as needed, to thin it out
  • Croutons (store-bought or homemade)

Preparation

Step 1

In a blender or food processor, blend the tofu, lemon juice, garlic, capers, nutritional yeast, mustard, pepper, and salt. Add water as needed, to thin it out. The consistency should be nice and creamy but not so thick that you can't pour it. Tweak the flavor with the various ingredients to your liking. (You may like it tangier and want to add more mustard, you may like it saltier and want to add more capers, etc.)


Tear 4 heads of romaine lettuce into bite size pieces, and add to a large bowl. Add the dressing and croutons, and toss to combine.


Makes 6 to 8 servings

This dressing can be stored in an airtight container in refrigerator for up to one week.
