Ingredients
- 1 whole chicken (approximately 2.5 pounds)
- 1/2 Cup ghee
- 2 Teaspoon mixed dried herbs (such as rosemary, thyme, parsley)
- 1 Pinch Sea salt
- 1 Pinch pepper

Preparation
Step 1
Preheat oven to 325°. Gently melt the ghee and add 1 teaspoon of the herbs. Sprinkle the remaining herbs in the cavity of the chicken and lightly salt and pepper. Place chicken in a roasting pan, preferably one just big enough to hold it. Pour melted ghee and herbs over the chicken. Bake, uncovered, basting regularly with ghee and juices from the pan for 1 – 1 ½ hours or until juices run clear and a meat thermometer inserted into the inner thigh muscle reads 165-170°. Remove from the oven and allow the chicken to rest for 15 minutes before serving. And remember to save the bones for broth!
